I've created an article with mockups and ideas for things that I'd like to see GNOME 3.* doing in the future.
The article can be seen here, with more ideas and things available through my blog, such as the Scoop proposal, and a mockup of how to make drag and drop far easier with spatial nautilus.

not quite what that links talks about, but a huge improvement IMO would be if Metacity groupped all windows belonging to a single app together, so you could raise / lower them all at once, minimize them at once etc. Which would make apps like gimp with lots of windows work better. Metacity does have an application mode setting in gconf for this, but states it is mostly unimplemented.
