I would agree on removing quit, since it's not always clear to me that it makes sense.

However, if there's a key-binding, there should be a menu entry for it. Always. That's one of the first rules of good UI design. Menus serve as some of the simplest self-documentation, and removing a menu entry should be indicative of removing the functionality.
