excessive prefs and over full menu's have high cost, useability studies back this up.

Not being able what I want to do, has an even higher cost. C'mon, if I would be using windows, most of my admin jobs would take twice as long. Not to mention, some would be impossible, because I would so very limited by the braindeadness that I would rather start shoving bits around myself, in morse code. I even wouldn't want to do anything with computers anymore, just out of utter frustration.

Which is not saying I like overpacked menu's. I think we need to focus on each other's vision, and see we are not necessary talking about opposite things.
