pan is a great example... i love pan, but its ui is a mess... i'm a sys admin and a programmer and it and hence i could be deamed a poweruser/geek, but still it takes me WAY to long to find out where to set some nessesary options (like where binaries get downloaded to) because the UI is so cluttered up. a good 60% of those prefs could be relegated to gconf keys where the power users could tweak them on the rare occastions they might need too.

excessive prefs and over full menu's have high cost, useability studies back this up.
